Colloidal and Interfacial Phenomena. Pore formation by antimicrobial peptides in lipid bilayers, molecular dynamics simulation of protein conformation, oxidative stability in food emulsions, pasting behavior of starch.

Biography

Ganesan Narsimhan is a Professor in Agricultural and Biological Engineering at Purdue University. Narsimhan came to Purdue the first time in 1979 - 1982 as a visiting Associate Professor in the School of Chemical Engineering. He returned to Purdue in 1986 as Assistant Professor of Food Engineering and became an Associate Professor in 1992. His B.S. is in Chemical Engineering from the Indian Institute of Technology, Kharagpur, India and his M.S. and Ph.D. in Chemical Engineering from Indian Institute of Technology, Kanpur, India. His research interests include food colloids and bioseparations. His teaching, at both undergraduate and graduate levels, is in the Food Process Engineering curriculum.
